2 Teaspoons fresh ginger
1 Half teaspoon thyme
6 Cloves
8-10 Carrots
2 Sticks celery
1 Teaspoon parsley
2 Tablespoons chutney + tomato paste
Half litre chicken stock
Half litre red wine
Half litre boiling water

Oven 160% cook 4-5 hours

Brown oxtail in seasoned flour
Fry onions garlic ginger in oil
Add all the herbs and spices
Add chicken stock wine water and put dish in oven
